Baked Apple Oatmeal (Gluten, dairy, nut and egg free)
I love me a good, slow morning. I like to sip my coffee and read my Bible in peace. Instead of the standard eggs, bacon and toast that requires me to stand over the stove, I like that this recipe allows me to throw it in one dish, place in the oven and win some of my time back. And what’s even better is that it fills the whole house with the aromas of cinnamon and warm apples AND it tastes like an apple pie. Yes, please!
My whole family enjoys it over the course of two days and it saves me so much time for at least two mornings. This recipe is dairy, gluten, nut and egg-free which is such a win for families with food allergies or sensitivities!
Ingredients:
2 cups gluten-free old-fashioned oats (I like One Degree!)
1 tsp baking powder
1 tsp cinnamon
1 tsp sea salt
1 can organic coconut milk
1/2 c organic applesauce
1/4 cup organic maple syrup
1 tbsp unrefined coconut oil
2 tsp vanilla extract
3 honeycrisp apples diced
Instructions:
- Preheat oven to 375-degrees. Spray a 24-oz casserole dish with olive oil.
- Mix rolled oats, baking powder, salt, cinnamon, coconut milk, applesauce, maple syrup, coconut oil and vanilla in a standing mixer.
- Fold in half the diced apples
- Pour mix into the casserole dish and top with the leftover apples.
- Bake for 40 minutes.
- Serve with a drizzle of maple syrup and milk of your choice. Lightly sprinkle cinnamon on your serving.
- Store in fridge up to two days in an an airtight container.
